Toffee Blondies



I don't remember where I saw these, but it was another food blogger who posted a similiar recipe for blondie brownies, and then another who posted about toffee brownies. I like both these things and decided to make them even though Jim doesn't care for toffee. I thought, good...more for me. These turned out to be so good that Jim even ate them...and LIKED them. I had to give half the batch away because Jim and I had them for dessert and then I had one for breakfast the next morning. I literally had to get them out of the house or else I would stand there at the counter and eat these bite by bite.



Preheat oven to 350. Spray an 8x8 baking dish with with baking spray or rub with butter.


Cream butter and brown sugar together until smooth.




Beat in eggs, vanilla and salt, scraping down sides. Ina Garten always cracks eggs into another dish to make sure eggs are "good" before adding to the dough.




I'm using a mexican vanilla.


Regular sea salt.



Baking Powder, Baking Soda.


Sift the baking powder and baking soda with flour.


Slowly add flour mixture to wet ingredients in mixer.


Add toffee bits. This was supposed to be the garlic to my vampire....thought these would keep Jim away from my sweets. Nope, the sweet goodness of these blondie brownies were too much for my vampire. Jim loved these.




To take these over the top I included a bar of semi-sweet chocolate.


I did a rough chop, medium size chunks and gently folded into the mix.


Press this into the greased baking dish.


Bake at 350 for 40 minutes.


You could let this cool in the pan before slicing.



But we couldn't wait that long.



These melt in your mouth.


Even if you don't like toffee...aparantly you will like these. If you are wondering where my measurments are... so am I. I made these a week ago and didn't write down how much of each ingredient I used. Your best bet is to go to http://www.foodblogsearch.com/ and type in phrases like "toffee blondie" or "blondie brownies" and then add toffee and chocolate or whatever else you have on hand that you want to add.


NOW... I need your help. I have these dried chiles in my pantry and not sure what to do with them.


Guajillo Chiles. Here is the back of the package. What do I do with them?!?!?


Any ideas??

  1. Ok, this isn't going to be super helpful because I don't have an actual recipe, but a friend of mine once made some kind of pork using these chiles, and said it was amazing. At the time, she said she just googled "recipes using guajillo chiles" and came across the recipe during her search. I wish I could tell you more, but maybe that is a start!!

  2. Thanks Jennifer. You know I ABSOLUTELY LOVE pulled pork....made it a few months ago and fell in love. I posted the recipe here too. Anyway, I like the suggestion of adding these peppers to the pork. THANKS!

  5. O.k. Mandy, I couldn't find the toffee at the store so I bought a large Symphony Bar...toffee, nuts AND chocolate, whahoo. I made them and they are baking, I will let you know how they turned out.

  6. Mandy, I'm thinking you can maybe reconstitute the green chili by soaking in water and then making chili relleno...in Arizona these are very popular or I'm thinking how about cooking a roast and making green chili with it...burritos...yum.
