Pots de Creme

I have a major sweet tooth and try not to keep anything sugary in the house. But when guests come over, then I use that as an excuse to make homemade sweets "for them." So when P-Dub (Pioneer Woman) suggested these tasty and easy to make desserts I had to give it a shot. She calls them Pots de Creme and explains on her blog they are pronounced “Po de Krehm,” and ya'll she isn't lying. These are super easy and taste soooo good, pudding texture like a sophisticated flan. Here is what I used:

I'm not a coffee drinker, so I purchased instant coffee crystals for this recipe - and any other recipes that call for coffee in the future. Four room temperature eggs, semi sweet chocolate chips, and I used BAILEY'S Irish Cream in Caramel flavor.


Into your blender goes 12 ounces of semi-sweet chocolate chips, then crack four room temperature eggs on top, add a pinch of salt. If you want to make a non-alcoholic version add two tablespoons of vanilla. If you are like me, add two tablespoons (then spill a little more in) of Bailey's or you could use Cognac, Kahlua, Whiskey. I'm kidding about the whiskey. Think of things that goes great in coffee. Frangelico would be a great one. I love coffee with Frangelico and Bailey's. Maybe next time I will use a tablespoon of each.

Next, you turn that blender on and once it gets going slowly pour in 8 ounces of strong, VERY HOT coffee. The hot coffee melts the chocolate chips and you end up with a very rich and smooth chocolate pudding.

I like PW's suggestion of pouring the mixture into varied glasses. Her blog has the greatest photos. I was serving five women, so I decided to use my martini glasses.

Put these in the fridge overnight to let them set. I wish I would had thought to rim the glasses BEFORE I filled each one. Cocoa powder or cinnamon on the rim would be really great. I managed to get cinnamon on some of them after the fact, but I wouldn't reccomend it.


After I rimmed this martini glass with cinnamon I topped with a dallop of whipped cream. It was delish! Super easy, very impressive to serve your guests and extremely tasty.

  1. Glad you remembered to use hot coffee! I used leftover coffee from that morning and the chocolate didn't get totally melted...
