Soups On!

 
It's a roundup of my most favorite soup recipes. Whether you slurp it, sip it or spoon it - SOUP can be a wonderful first course or made into a meal.
 
Speaking of a one pot meals, this warm and spicy Moroccan Chicken Soup is full of veggies and flavor. Spiced with cumin, curry and paprika, the onions, celery and carrots are simmered along with shredded chicken, chickpeas and chopped zucchini. This Moroccan soup is more likely to be served as a light supper rather than as a first course. These will be leftovers the family will ask for! Reheat and serve over rice, quinoa or couscous.

The salty/sweet mouthwatering flavors of this Butternut Squash Soup with Cider Cream surprised me the most. Reading through the recipe, it sounded like it would be good. But when I finished and topped my bowl with the cider cream - OMG, this is an outstanding recipe. One I need to make again soon now that the weather is turning chilly.
 
Looking back through these posts makes me want to remake and photograph these dishes again. We moved and my new kitchen has lots of natural light and space to set up for a proper photo shoot. Ohhh... one of these days I'm going to get back into the swing of food blogging.
 
To me, a bowl of potato soup is ultimate comfort food. With the addition of grilled shrimp and corn, it becomes a complete meal in a bowl. Creamy, cheesy, filling! It warms you from the inside out, doesn't it? This recipe for Shrimp Corn and Potato Chowder is easy enough to prepare during the week and the leftovers are even better the next day.  
 


I rarely order French Onion Soup at restaurants because I have yet to find one that I like as much as this one I made at home. What I love most about this soup is the addition of Guinness Beer which gives it a more complex and robust flavor. If you like onion soup, this one is my hands down favorite!
