Menu of the Week

Our family enjoyed some new recipes this week. A few of these were requested to be "regulars" from now on. Keep reading to find out which we loved the most... Company Pot Roast from Ina Garten, Smoked Samon Tartines and Crab Cakes, Spaghetti Carbonara, Crawfish Pie, Mini Pizza's and Salisbury Meatballs over Egg Noodles.

Sunday: Company Pot Roast
I've made many recipes from Ina Garten, the Barefoot Contessa, enough to know I can trust the woman. I have only found one or two that I didn't just fall in love with. This Pot Roast recipe is so good you will want to make it for company, hence the name. I posted the recipe in 2009 and still reference it (and not just for special occasions.)

Monday: Smoked Salmon Tartines with Crab Cakes
This was hardly a "recipe" but a solution to feeding my family FAST on a night we didn't have time to do any real cooking. I bought a pre-sliced loaf of country bread and lightly toasted a few slices in the oven. In a small bowl I mixed softened cream cheese with fresh chives and fresh dill, then smeared that on my toast points. Lastly I topped the cheese spread with thin slices of cold smoked salmon and sprinkled the tops with Fleur de Sel French Sea Salt. Bon Appetit has a great recipe posted if you want to follow something. The crab cakes were purchased fresh and baked in the oven.

Tuesday:  Spaghetti Carbonara
I take Harper to dance on Tuesday nights so this recipe fit the bill when I had just 15 minutes to prep dinner before we left and then 15 minutes to put it on the table after dance. Once you dice, chop, grate and crack your ingredients, the only thing left is to boil your noodles then mix it all together.

Wednesday: Crawfish Pie
What a surprise this meal was. I knew Jim would like it, but I wasn't sure I would enjoy it as much as I did. Leftovers were great too! Follow the link for the full recipe.

Thursday: Mini Pizzas

I saw this after school snack idea on Food Network and thought Harper would really get into making her own pizza. I made homemade pizza sauce on the weekend and stored in the fridge for tonight. Harper and I topped our English muffins with sauce, sprinkled with shredded mozzarella cheese and then topped with pepperoni. She loves being my sous chef and ate every bit of the pizza she made. FYI: Adults need to make 2-4 halves to make a meal.

Friday: Salisbury Meatballs over Egg Noodles

This was the family favorite of the week. Although my pictures don't do the recipe justice, believe me when I say this is easy to put together and everyone in my family loved it.  I've been asked to put this on a permanent rotation at my house.

  1. Hey, very nice site. I came across this on Google, and I am stoked that I did. I will definitely be coming back here more often. Wish I could add to the conversation and bring a bit more to the table, but am just taking in as much info as I can at the moment. Thanks for sharing.
